Super foods Salad Bowl

This Super food Salad Bowl is loaded with plant-based protein, phytonutrients, vitamins and minerals.

It’s super delicious and satisfying on all levels with the sweetness from the cranberries, earthiness

 from the kale, creaminess from the avocado and crunchiness from the sunflower seeds.

Ingredients

 3 cups organic kale (stems removed, chopped)

 1 cup organic edamame (frozen, thawed)

 1 cup cooked organic whole grain (your choice — quinoa, millet, buckwheat, farro, brown rice, etc.)

 1 avocado (chopped)

 ½ cup red onion (chopped)

 ½ cup carrots (shredded)

 4 radishes (raw, sliced)

 ½ cup walnuts (chopped)

 ¼ cup sunflower seeds (raw, unsalted)

 ¼ cup dried cranberries (fruit juice sweetened)

 2 tbsp chia seeds

 ¼ cup cilantro (chopped)

Directions

To a large bowl, add all ingredients and mix well.

Divide between two medium bowls.

Top with the Creamy Citrus Dressing (recipe below) or a simple squeeze of lemon.

Creamy Citrus Dressing

Ingredients

 ½ cup cashews (soaked in water for 4–6 hours)

 ½ cup orange juice (freshly squeezed from one large or two medium organic navel oranges)

 2 tbsp organic orange zest (zest before juicing)

 1 medium lemon (juiced)

 1 tbsp organic apple cider vinegar

 1 tbsp tahini

 1 shallot (chopped)

  pepper (optional)

Place all ingredients in a food processor or small blender and blend until smooth.

Adjust flavors with extra orange juice, lemon and pepper if desired.
