Raspberry Ice Pops

Homemade Raspberry Ice Pops

A sweet frozen treat, ideal for those summer days, it’s so much better to make your own as you know exactly what you are eating.

Raspberries are high in vitamins, fiber, and antioxidants which may reduce the risk of certain chronic diseases like hypertension and they are low in calories.

Ingredients

2 ¼ cups full fat coconut milk

2 ½ teaspoons unflavored gelatin powder

½ cup maple syrup

1 lemon (or lime), juice and zest

½ teaspoon ground cardamom

1 teaspoon vanilla extract

2 teaspoon Chia seeds

½ cup fresh or frozen raspberries

Directions

Place ¼ cup of coconut milk in a medium heatproof bowl, sprinkle the gelatin over it and set aside for 5 minutes and watch it work its magic over the next few minutes

Heat the remaining 2 cups of coconut milk with the maple syrup, chia seeds, lemon, cardamom, vanilla in a saucepan over a medium- high heat for 5 minutes. Whisk the soften gelatin mixture into the saucepan until it is dissolved.

Allow to chill for at least 20 minutes and then place 3-4 raspberries in each ice pop mold and then fill with liquid.

Place pops in freezer to set- a minimum of 4 hours.
