Oven Baked Strawberry Pancake
This is a easy to make treat, this oven baked strawberry pancake is a real winner, this has a custard texture and tastes so good.I use this as my go to brunch treat, it only has 90mg of sodium per serving.
3 cups of fresh strawberries, sliced
2 tablespoons of sugar
2 tablespoons of unsalted butter
1 1/2 cups low fat milk
3/4 cup flour
1/3 cup sugar
1/2 teaspoon pure vanilla extract
1 c. fat free or low fat vanilla yogurt
Place the sliced strawberries into a mixing bowl, add 2 tablespoons of sugar and toss gently to coat. Set aside.
Preheat the oven to 375 degrees. Get out a 9-inch pie pan.
Place the butter in the pan and melt (either in oven or the microwave), then swirl pan to coat bottom and sides with butter.
In a large mixing bowl, beat together the egg and milk. Add the flour, sugar and vanilla and mix well to combine.
Pour batter into the prepared pie pan, place pan on middle rack in oven and bake until set, 25-30 minutes. Remove from oven.
Slice into wedges. Sprinkle with a little Icing Sugar
Spoon strawberries over top, drizzle with yogurt.
