Pesto Grilled Chicken Salad

This Pesto Grilled Chicken Salad is such an easy recipe to make and it is so tasty,

I make a big salad as you can have it in your sandwiches or wraps the next day.

Ingredients

Pesto Grilled Chicken Salad

2 medium skinless organic chicken breasts

1 tablespoon Extra Virgin Olive Oil

5 Cups of your favorite lettuce (chopped)

1 Cup Cucumber

1 cup Cherry tomatoes (cut into halves)

½ Cup Red Onion

½ Cup of Mixed Color Bell Peppers

2 hardboiled eggs

Pesto Salad Dressing

¼ Cup of Red Onion

2 garlic Cloves

½ teaspoon Italian Blend Seasoning

1/3 Cup of Extra Virgin Olive Oil

2 Tablespoons of Apple Cider Vinegar

¼ teaspoon Red Pepper Flakes

4 teaspoons pesto sauce

Ground black pepper

Directions

Place chicken on a greased grill or grill pan and cook for about 3-4 minutes on each side, or until the chicken is cooked though. Set aside and let the chicken rest.

Hard boil 2 eggs.

Add all the ingredients for your salad dressing into a food processor or blender for about 3 minutes, set aside.

For the salad, in a large salad bowl add the lettuce as your base and then the remaining items. the Cucumber, red onions, cherry tomatoes, bell peppers, boiled eggs and sliced chicken breasts.
