Cauliflower Fajitas

Ingredients

1 Medium head of cauliflower trimmed and thinly sliced

1 medium sliced onion

1 medium red bell pepper

1 teaspoon of cumin

1 teaspoon Chili powder

½ teaspoon ground coriander

¼ teaspoon ground black pepper

3 tablespoon of Extra-Virgin olive oil

½ cup of homemade Salsa

1 14 oz. can of sodium free refried or black beans

12 corn tortillas

Directions

Position a rack in top third of oven and place a large cast-iron skillet on it. Preheat to 425°F.

Combine cauliflower, bell pepper, onion and oil in a medium bowl and toss to coat. Sprinkle with chili powder, cumin, coriander and pepper and toss until well coated. Carefully add the mixture to the hot pan. Roast, stirring once, until the vegetables are tender, about 30 minutes.

Set broiler to high. Broil the vegetables until lightly browned, about 2 minutes

Top the vegetables with pico de gallo (recipe below) , jalapeños and cilantro, if desired. Serve with refried beans and tortillas.

  • 8 or 9 cocktail tomatoes (about 8 ounces), quartered
  • 2 green onions, white and light green parts only, chopped
  • 1 jalapeño pepper, seeded and chopped
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon fresh lime juice
