Baked Eggs in Avocado
A wonderful way to start your day with a baked egg in avocado. When avocado’s are in season trying to use them up can be a challenge, well this is the perfect recipe to start with.
Peel and pit an avocado and spoon an egg yolk into each half. Keep spooning the egg white until the hole is full. Season the avocado with herbs and spices like chives, parsley, and sea salt.
Place in the oven and wait until eggs are fully cooked
Start your day with a dose of healthy monounsaturated fats and protein with a baked egg in an avocado. It’s a great way to enjoy avocado in the morning. This is super delicious.
- 1 medium or large avocado
- 2 small eggs
- Preheat oven to 450°F.
- Cut avocado in half and carefully remove the pit from the center.
- Crack one egg at a time into a bowl and slide each egg into the hole left by the pit in each avocado half.
- Place on baking sheet and bake at 450°F for 10-12 minutes.
