This is a great meal to have on the Dash diet, a Chicken and pasta, salad, and sauce is just everything you need. We will be having a serving which is 1.5 cups.
Ingredients (6 servings):
1/2 cup of low-fat buttermilk,
1/4 cup low-fat plain Greek yogurt,
3 tablespoons extra-virgin olive oil,
2 tablespoons fresh lemon juice,
2 teaspoons Dijon mustard,
1 large garlic clove,
1/3 cup finely grated Parmesan cheese,
Ground pepper,
8 ounces’ whole-wheat penne,
3 cups shredded cooked chicken breast,
2 cups cherry tomatoes cut in half,
5 cups chopped lettuce.
Preparation:
Take a bowl and put the buttermilk, yogurt, olive oil, lemon juice, mustard, garlic, 1/6 cup of parmesan and pepper 0.25 teaspoons each and mix. Blend it on high speed until you get a smooth sauce.
Boil your pasta as instructed on the package. Don’t salt the pasta. While draining the pasta make sure to keep about a cup of pasta water to add to the sauce mixture we created.
Combine the sauce and pasta together, add chicken, tomatoes, and the remaining pepper (0.25 tsp each). Put the meal on a bed of lettuce and add the 1/6 cup remaining grated Parmesan.
