Sweet Potato and Black Bean Burgers

This recipe is loaded with sweet potatoes and black beans a wonderful filling source of fiber and  the Pepita seeds are full of nutrients

Ingredients

1 cup of mashed sweet potato

1 ½ cups of rolled oats

1 cup of mashed black beans

2 teaspoons onion powder

1 teaspoon turmeric

½ teaspoon of ground black pepper

Olive oil for cooking and whole wheat burger buns which are optional as these are Black Bean burgers are delicious on their own.

The Sauce

¼ cup toasted pepitas (or pumpkin seeds)

¼ cup Salsa Verde

Topping

Avocado Sliced

Thinly sliced red onion

Your favorite type of lettuce

DIRECTIONS

Pulse rolled oats in a food processor until coarsely ground, set aside

Combine Sweet potato, black beans and spices and blend together with rolled oats

This recipe makes about 4 good size Black Bean patties.

Heat your skillet with Olive Oil over a medium heat, add patties and fry on both sides until crisp.

To make the sauce puree the pepitas and salsa in your blender and set aside

Build your burger and enjoy.
