HOMEMADE BLUEBERRY COCONUT SOFT SERVE
This is a decadent dessert with the combination of blueberries and coconut is amazing and it has only 2 mg of sodium and no cholesterol per serving, this recipe is for 4 servings and only have when you need that sweet treat.
Ingredients
4 Cups of frozen blueberries
½ full fat coconut milk
¼ cup coconut oil
2 tablespoons fresh minced basil leaves
1 tablespoon Manukau honey
Zest of 1 lime and juice
½ teaspoon vanilla extract
An optional 1 teaspoon of coconut flakes to sprinkle on the top when you serve this delicious dessert
DIRECTIONS
Make this recipe in two batches; combine half the blueberries, coconut milk, coconut oil, basil and honey, lime juice and zest and vanilla in your blender on high until smooth and thick and creamy for about 1 minute, place into a large bowl and put in your freezer.
Repeat and then add to the first batch.
