Here is a Romaine Salad with a tasty twist, so simple and quick to make and such a great lunchtime meal, add your own protein if you like a little chicken, tuna or fish make a healthy meal.
Ingredients
4 Hearts of Romaine Lettice
1 Small Avocado
¼ slivered toasted almonds
Dressing
2 teaspoons Dijon mustard
2 teaspoons of lemon juice
2 tablespoons of Extra Virgin Olive Oil
1 tablespoon of capers
1 tablespoon of White Miso Paste
1 teaspoon Chia Seeds
¼ teaspoon of ground black pepper
Directions
Preheat a cast iron skillet over a medium heat.
Mix lemon juice, olive oil, chopped capers, white miso paste, chia seeds and pepper in a medium mixing bowl.
Cut lettuce into halves lengthwise and sprinkle with olive oil and pepper and place lettuce hearts face down on the grill for 1 ½ minutes, then flip and grill for another 30 seconds.
Top the lettuce halves with Avocado Slices and drizzle with dressing and add toasted almonds.
