Mushrooms are full of vitamins and protein here is a Herb Roasted Mushroom recipe the is so easy and wonderful for any side dish or a light lunch, this recipe has only 4 mg of sodium per 1 cup and they are packed with flavor and nutrition, which is ideal for Dash dieters in both phases. Roasted mushrooms brings out the full flavor so much better than grilling or microwaving them- they are pretty tasteless.

This recipe serves 4 people and only takes 10 minutes to prepare.

Ingredients

1 pound of white button mushrooms or Cremini mushrooms

2 cloves minced garlic

3 tablespoons olive oil

1 sprig rosemary-stemmed and leaves chopped

¼ cup cilantro roughly chopped

2 sprigs of fresh thyme, stems removed and roughly chopped

½ teaspoon cracked pepper

1 teaspoon Chia seeds

Directions

Preheat the oven to 350’F

Rinse mushrooms to take the dirt off them and pat dry with paper towel, then in a large bowl add all the remaining ingredients and toss the mushrooms in the oil and herb mixture.

Spread the mushrooms out on a baking tray and roast until they are soft and slightly golden about 25-30 minutes. If there are any extras they can be stored in an airtight container for upto 3 days in the fridge.
